以鲜活农产品品质、加工和贮藏特性变化及调控机理为研究对象,进行农产品的精深加工、贮运、保鲜包装、货架期预测技术等方面的研究。主要以技术工程化与产业化研究为主,针对农产品加工和贮藏过程中关于农产品加工特性、货架期品质、物理改性、农产品采后保鲜生理、病理以及基因调控等共性关键技术研究,以新型材料与设施开发为保障,采用绿色加工、生物材料、智能评价等技术手段,保障农产品及其加工产品的品质与卫生安全,为行业提供可直接转化的成熟技术成果。
