Biography

Dr. Rui Yang is a Master's Supervisor of College of Food Engineering and Biotechnology, Tianjin University of Science and Technology. He completed Master and Doctor Degrees from China Agricultural University at 2011 and 2014, majoring in Food Science. Since 2014, Dr. Rui Yang joined Tianjin University of Science & Technology as a lecturer. As the First and communicating authors, he published more than 20 scientific papers, and also published more than 30 co-author scientific papers. Dr. Rui Yang hosts several findings such as the National Natural Science Foundation of China, the Natural Science Foundation of Tianjin City, the Basic Research Finding of Tianjin High School, and the Technical Development Project.

Research Interests

With the background of food science and protein chemistry/nutrition, Dr. Rui Yang has been conducting research in the structure, function, nutrition of the plant proteins, especially ferritin. Recognizing the unique cage-like structure of and the reversible self-assembly character of the ferritin cage, the relationship between the ferritin and food resource nutrients (including the tea polyphenols, anthocyanin, lutein, rutin, chlorogenic acid, etc.) and the preparation of ferritin-food nutrients complex are extensively studied. On this basis, the effect of thermal, cold plasma, pulsed electric fields, chaotrope, and high hydrostatic pressure on the ferritin and ferritin-food nutrients complexes are also great interests. Furthermore, the digestion of the ferritin, glycosylated ferritin, the polyphenol decorated ferritin, and ferritin-food nutrients complex in the simulated gastrointestinal tract are substantially investigated. The absorption of ferritin-food nutrients complex in the Caco-2 cell model is also an interest point. A series of significant papers were published on these areas.
